Welcome to the weekend and the Quality Wines newsletter.
The bill of fare for next week is bursting with the darling buds of May. Swiss chard is served with the creamiest mozzarella, pine nut & golden raisins. Espinacas con garbanzos (spinach with chickpeas to you & I) get cooked low and slow with more than just a flirty nod to the Iberian peninsula’s historical affiliations with north Africa. Spiced with cumin, smoked paprika and plenty of garlic. For flavour, for health, for Andalusia!
Green asparagus will be served alongside brandade. Don’t tell them it’s not Pike. It’s hake!
Cornish brown crab meat gets smeared on toast covered in radioactive green Pastis & garlic butter and, steamed fillets of hake sit on slow cooked Romana zucchini and dressed with anchovy & olive.
There’s plenty of booze, cannoli & a new ‘Express Lunch’ to keep you all refreshed and impressed.
