At lunch this week ripe & juicy melons from the Po basin are seasoned with Amalfi lemon & espelette pepper. Santorini fava is served with peppers, olives & oregano, whilst Summer staple of caponata gets another day in sun.
A Salade Niç(k)oise forgoes green beans & spuds and focuses fresh. Peak tomatoes, cucumbers, peppers & spring onions are enriched with tuna & anchovies, the best of the store cupboard. A tagliatelle with girolles, recent heat meaning the fungi are resplendent & abundant, is sauced with butter & Parmesan for indulgence & decadence. ‘Tonno del Chiant’, a confusingly named preparation of pork, comes atop borlotti beans & salsa verde.

At dinner Cornish Red chickens are roasted with fennel & saffron. A punchy rouille is smeared on a toast of yesterday’s focaccia. Sitting beneath the birds, collecting juices, biding time, accumulating knowledge, the coop de gras.
A Greek salad, a hand-dived scallop in Café de Paris butter, fasolakia with tzatziki, zucchini flowers, turbots and more await your arrival. Hoping to see you all soon.
