Gratinated for the People.

Bloviation on bivalves, bifanas, bolito. Salutations to Samedi, Super Bocks, salted hake. Welcome to the weekend, Williams pears, the waffle, the wewsletter!
Plenty changes aboard the blackboard recently. Chalks have been spent, a Crayola crisis, fingertips blunted, bruised, deprinted. Here’s seven delicious things to eat at QW this week:
Stumbling out from the caves, shielding our eyes from the light of a new dawn, we rejoice the end of the bifana’s tyranny by radiating in the glory of a new sandwich, a new beer, a new deal. Enter the bollito panino. A classic milk bun filled with braised brisket of beef, with a choice of red or green sauce (or both you sickos), served alongside a Peroni Red for £10 between midday and 2:30pm & 5-6pm, daily from Tuesday 16th.
Boiled Swiss chard comes with pine nuts & very good feta- an ode to horta, forna, Hellenic health, bucolia; a Sardinian split pea soup is hearty - my favaurite game is to be taken with pane carasau & a cardigan; a plethora of peppers are blackened & roasted, pricked & peeled, picante with Merlot vinegar, a shock to a waspish wedge of ricotta; AOC lapel-touting Coco de Paimpol beans come with Southern French figs & rocket; hand-made tagliatelle comes in a sauce of yellow bell pepper infused with saffron the dish finished with dollops of straciatella; salted hake & spinach are introduced to a bechamel, breadcrumbs are added, bowls get gratinated. Just what the doctor ordered.
Finally, and this week’s winner, a stew of lamb shank, tomato & paprika all bought together by a ‘majodo’: a fried paste of almonds, breadcrumbs, chicken livers and garlic that takes this ‘Caldereta de Cordero’ from shepherd's pie at night to shepherd’s delight, served crispy alongside olive oil potatoes. Come and eat it. You can thank me then.
