Happy weekend Winos & welcome to the Quality Wines newsletter. Bringing you tidings of a plethora of pink, the gamut of green, a vertical of vinos.

Domaine Tempier of the late, great, Lulu Peyraud, has always produced some of the finest rosé wines in Provence, if not the planet. Even more delicious after some years of rest in the bottle, shoreline-stones sea-splattered, gariguette & garrigue galvanised, the flavours of Bandol abound. So, it is a real privilege get our grubby little mits on vintages 2015, 2016, 2017, 2018 & 2020. These are all available to drink by the glass. A rare chance then to taste these storied & aged wines alongside each other. Come and get, before they are gone.

Veering to the verdant: The QW take on boiled Greek wild greens is back. We use Swiss chard, which is cooked until soft, topped with barrel-aged feta, plenty of lemon & olive oil, finished with toasted pine nuts & oregano. Hortasmic, suit you sir. This week’s asparagus is tossed amongst yolksome tagliatelle & pesto Genovese, ebullient with basil. Salada de bacalhau provides vim & vigour of citrus, with coriander & parsley, seasoning mineral chickpeas.

Whole lemon soles are roasted and served bathed in beurre blanc with tomatoes & anchovy. A solo fish supper, one on one, soul 2 sole.

Elsewhere pork rillettes, whipped in fat, scallops roasted in Café de Paris & long cooked lamb shoulder with a creamy polenta, olives and peppers complete a carniverous quintet.

Yes, our set lunch is still unfathomably £27 for 3 courses. Yes, a QF(not fried)C & ‘nduja panino comes with a beer for £10 at lunch and between 5pm-7pm.

Yes…yes, yes, yes.
