Mangalitza & Glamour

Welcome to Friday & the Quality Wines newsletter.

In a week of infamous British Gammons, at QW its all Mangalitza & glamour. Coombeshead Farm’s cured pork belly is back on the menu. Nutty, fatty, international & delicious. From further afield, Elliot at Ham & Cheese Co.’s impeccably sourced Culatello di Zibello has been a staple for years. The best ham we’ve ever tried. Remember that 2010, Rinaldi, Barolo you savoured? but more porcine.

Piedmonetese pancetta is crisped in the oven and served in sesame milk buns with iceberg lettuce, peak Sicilian tomatoes and mayonnaise. People have been calling it the P.L.T, I just call it F.I.T. Available all day for £10. And, with a free negroni, between 5pm - 6pm.

A.P.E.R.I.T.I.V.O

Bull’s heart tomatoes are served with borlotti beans and first in and best dressed in Salmoriglio. A Sicilian dressing who’s key roles are taken with oregano, lemon & bastard good olive oil. White figs have been a hit with Manchego and will be available next week too. Tagliolini with hand-dived scallop, chilli & lemon will demand a large glass of something refreshing, mineral & zippy.

For those in need of some Southern French escapism but without the second home, pot-roast lamb shoulder comes with smooth as a baby’s bum olive oil mash & ratatouille, yes that dish from that movie! And, steamed hake with crab bisque, fennel & rouille. Bouillabaisse for a Dream.

Looking forward to seeing you all soon.
