Welcome to Friday at HQ and the Quality Wines newsletter. The County Championship is complete, the equinox approaches, there’s partridge in house, Gamay in my glass & broccoli at the allotment.
Next week a return of an all time favourite sandwich at QW. A mortadella, burrata & pistachio pesto panino of fame, renown, distinction, note. The Notorious M.B.P, is back! Only the early fella gets the della however, available at lunch (until 2:30pm), Tuesday to Saturday with a wine, beer of soft for £15. A pasta of mussels, ventricina, cream & parsley is also available at lunchtime. Same deal, same steal.
Cervelle de canut, the Lyonnaise specialty is accompanied by endive & radish, there’s rumour of a tonnato sauce later in the week. So, hang onto your fishing hats.
Black figs will lay with Lardo di Colonatta, adorned with almonds & wild nettle honey. It’s got me in the mood for crisp morning walks, Barolo, lumpy jumpers & Midsomer Murders. And, farther along the Nebbiolo trail, egg yolk tagliatelle comes with the first (affordable) porcini of the season & an aged Parmigiano Reggiano.
Partridge is wrapped in pancetta & sage and, roasted with a side of pumpkin gratin. Knowing me saltimbocca, knowing you very pucca.

A quick note to say that Nick is enormously excited to be cooking at the excellent Coombeshead Farm on Sunday the 27th of October. Tickets are available on their website. I will be available in a non working capacity for company whilst petting furry pigs and drinking copiously in the beautiful Cornish countryside. Hope to see you there!
