A triumvirate of French bistro classics to get the blood pumping. Eggs get anchovies, a nappe of mayonnaise & lambs lettuce (for a January mâche up). Paté de campagne, mince, lardo & belly, pork three ways coarsely blended with pistachios, Quality Swines. Green salad, for cut & thrust.
Pasta e lenticchie is a hearty bowl of lentils, potatoes & orzo. A dish originating from landlocked Umbria (the home of lentils) & with a level of comfort that speaks to being squished between Tuscany & the Marche.
Risotto Milanese have the option to add veal shanks & croque Monsieurs are being liberally truffled once more. Whole red mullet are roasted with waxy pink fur potatoes and mojo verde. A green sauce from the Canaries and as far flung as we get. This is deep water QW.
A piece of portokalopita to round off dinner. Blitzed filo pastry is baked with a dollop of yoghurt, cinnamon & a hefty dose of orange syrup. More syrup, yoghurt & orange zest are added to order. There is bitter chocolate sorbet which I suggest taking with it. Tassos’ Chocolate Orange, if you will.
