Welcome to Friday & the Quality Wines newsletter. Bringing you tales of tomatoes, ruminations on merguez, a proposition on ‘au poivre’, maybe a short story on some scallops, an assertion on arroz.

Set lunch next week kicks of with options of: a crostini with ricotta & honey, ‘cervelle de canut’ served with Spring crudités and green asparagus with a black pepper sauce. In a historic accord much like if the channel tunnel project had taken a diversion through the South China Sea. British spears, French cognac & Sarawak pepper.

Mains at luncheon offer a Manchego & white onion tart with a watercress & shallot salad, Toulouse sausages with lentils & Dijon and ‘arroz de ameijoas’, a Portuguese dish of rice & clams with plenty of coriander and a big dollop of aioli.

Desserts include bitter chocolate sorbet, celestial set custard galaktoboureko & a selection of French cheeses for the fromagistas. Cannoli are of course available.

On our evening a la carte menu a plump hand-dived Cornish scallop gets roasted in garlic butter, steamed hake fillet sits on luxuriant olive oil mash, a sharp relish of datterini tomatoes, anchovy & a touch of balsamic brings salinity, acidity, equality. And, pot-roasted lamb shoulders are served with spiced merguez, waxy & fudgey potatoes that are cooked with the beasts are imbibed with all that lamb fat flavour and are worth a journey alone.
