The Winter of Missed Content

Forgive me Father, for I have sinned. It’s been 6 weeks since our last newsletter… Welcome back to the Croque Monsieurs, Madames & Mademoiselles of 2025. The first newsletter of the year brings tidings of rebellious decadence, green salads for the soul, Perigorging, the elixir of octogenarian quince orchards, caul fat & frozen vodka.

For the rest of this week and no further bollito misto is served, our version featuring chicken leg, ox cheek & Coombeshead Farm cotechino. A Veronese bread sauce is fortified with plenty Sarawak pepper, bone marrow & chicken stock. Sauce Pearà, the perfect foil for the mixed boil.

Available for another week a Perigord truffle croque monsieur. House tin loaf is stuffed with jambon ‘Prince de Paris’, Brie de Meaux, provolone & those black truffles. Pan fried in clarified butter to order with a flash in the oven for optimum ooze.

Next week brings our first, second menu of the year. Oeufs are adorned with mayonnaise, anchovies & mache, one for the heads & peak egg season. Pâté de campagne, a visceral slice of porcine & pistachio at home with a spot of brandy & the latest edition of Horse & Hound. A green salad dressed in whip-smart Champagne vinaigrette available for cutting fats & rationalising excess, if we must.

A risotto Milanese will be coming as one would be expect. White wine, rice, saffron & bone marrow, DFA. There will be braised veal shanks en place for those who wish to partake.

A £15 lunch of pasta & meatballs is on all week, with a glass, beer or soft drink. As ever vegetarian options will be available.

There are a whole host of new wines, some wines we found down the back of the sofa & some truly excellent juices from Styria on the list. Biodynamically farmed ancient orchards of conference pear & quince trees produce an unfiltered juice that is as much fun one could have in a glass with no fermentation.
